Sausage Stuffing with Fruits and Nuts

Try this flavourful sausage stuffing with fruits and nuts, for a change!

List of ingredients

  • 45 ml (3 tablespoons) canola oil
  • 1 onion finely chopped
  • 2 celery stalks, finely chopped
  • 3 cloves of garlic, chopped
  • 250 g Lafleur breakfast sausage meat
  • 200 g bread with crusts
  • 100 ml milk
  • 75 g dried raisins
  • 75 g sweetened dried cranberries
  • 75 g dried apricot chopped
  • 125 g walnuts, chopped
  • 125 g almonds,chopped
  • 3 eggs, whisked
  • Fresh thymechopped or dried
  • Fresh savoury chopped
  • Salt and ground black pepper to taste

 

Preparation

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, soak the bread without crusts with the milk.
  3. In a large frying pan, heat the oil on high heat and cook the onion, celery and garlic for 2 minutes.Remove from heat and let cool down.
  4. Add meat sausage (without its casing)to the soaked bread.
  5. Add the cooled down vegetable, whisked eggs and all the other ingredients, season to taste and mix.
  6. Put the stuffing in a buttered ovenproof bread-pan and cook for 60 minutes or until meat’s internal temperature reaches 176°F (80°C).

Tip

  • If you wish to cook the stuffing inside a turkey, you may have to remove stuffing once the turkey is cooked and continue the stuffing cooking process until it reaches an internal temperature of 175°C (80°C).
