How to cook the young Flamingo turkey: our turkey that must be thawed!

Thawing

You have the choice between 2 methods, either in the fridge or in cold water. Warning ! Never thaw a turkey at room temperature.

IN THE FRIDGE

Take your turkey out of the freezer, knowing that you should allow at least 10 hours per kilo or 5 hours per pound. Place it in a tray and at the bottom of the fridge. Always leave the turkey in its bag to avoid contamination.

IN COLD WATER

Place the wrapped turkey in a container and cover it with cold water. Change the water every hour. Count about 2 hours per kilo or 60 minutes per pound.

Note: Once thawed, your turkey can be kept in the fridge for 48 hours, no more.

Cooking the Young Turkey in the oven

If the following method may seem surprising to you, the results will be even more so!

1. Take your fresh or thawed turkey out of its packaging and put it in a roasting pan. Salt it lightly all over, outside and inside the cavity. WITHOUT COVERING, leave it overnight in the fridge. This step helps dry out the skin, which will become crisp when cooked.
2. Remove your turkey from the fridge about 60 minutes before putting it in the oven to bring it to room temperature. A turkey at room temperature takes less cooking time and provides more even cooking.
3. Preheat the oven to 200 ° C / 400 ° F.
4. Transfer your turkey to a roasting pan with a rack, so that the heat from the oven can circulate freely around it. Spread softened butter, oil or butter-mustard and herbs (your choice) with the back of a spoon over the entire surface of the turkey.
5. Roast at high temperature (200 ° C / 400 ° F) for the first 20 minutes, then at 180 ° C (350 ° F) until finished cooking. Your turkey is done when the thermometer, inserted into the thigh away from the bone, reads 80 ° C (176 ° F). For suggested cooking times by weight, see our table below.
Note: If your turkey is browning too quickly, loosely cover it with aluminum foil.
6. When out of the oven, loosely cover your turkey with aluminum foil and let it rest for 30 minutes to 1 hour. This will allow the meat to retain its cooking juices.

How to cook a frozen turkey in the oven

Note: As oven temperatures may vary, these instructions are for reference only.

1. To cook the turkey you will need a roasting pan with a grill and a lid or aluminum foil to cover the turkey.

3. The turkey is done when a thermometer inserted into the thigh, without touching the bone, indicates 80 ° C (176 ° F).
4. For a crispier result, remove the lid 30 minutes before the end of cooking.
5. Cover and let it rest for 15 minutes before serving.

Get a meat thermometer, it's worth it!

Since every turkey is different, you have to rely on the temperature and not on a given time. The cooking times listed on the packages are a good starting point, but the internal temperature is the best way to tell if your turkey is done properly.
